Aniseed originates from the Middle East; an annual herb with delicate feathery leaves and tiny white flowers and greyish-brown seeds. The oil was once venerated by the ancient Romans, Egyptians and Greeks; the Romans used it as an ingredient in a spicy cake known as ‘mustaceus’, while the Egyptians added it to bread.
Today, aniseed can be found in liqueurs and cordials, toothpastes and mouthwashes; in India, aniseed is used to freshen the breath, while in Turkey, aniseed seeds add the familiar flavour to the alcoholic drink ‘raki’.
